They have a glossy green head and white heart. Their crisp, juicy flesh are available all winter long. They're perfect for salads, soup, and hors d'oeuvre.  This delicate cream-colored variety has a light texture and pleasing flavor. Crisp, sweet and refreshing. Ready to eat immediately after harvest, in a chilled salad or pan-fried with ham. After a few days of frosts, Perle du nord endives should be harvested (or picked up from the supplier). The taste and texture are incomparable to that of the outer leaves that were left on the ground. After harvesting, store endives in your produce bin wrapped in a dry towel or newspaper. The endives will keep well for several weeks as long as they are not exposed to excessive heat.
