It then is often aged in a cheese prison or mold, and sometimes smoked or processed in other ways. Le Vieux Pane cheeses are available in different parts of the world. Le Vieux Pane is a gourmet cheese that is made in the French Tradition of old. We make our Camembert fresh several times a week with only raw milk. If you are looking for a soft, authentic Camembert similar to those in France, this cheese is for you. You will not find a creamier Camembert cheese anywhere else in Edmonton. Le Vieux Pane cheese is a specialty cheese carefully aged in a cellar for a minimum of two months. Its rind is washed regularly with red wine and its interior is then coated with natural ash to protect it from harmful bacteria. This cheese has a soft and supple texture with fine veins of white fat. The Le Vieux Pane is a wonderful complement to a fine wine. Gently pressed and aged for 100 days, then coated with paprika and lightly smoked. with a thin layer of natural mold on the rind, it is a soft textured cheese and has a lovely peppery flavor. This version of Pane is also known as German smoked cheese.
