Paul & Louise Tripes à la mode de Caen 400g is made with fresh meat from the selected beef and veal with natural pork fat. It's produced under the expert supervision of a group of butchers. Its texture is firm and easily digestible which makes the tripes very tasty. The tripes are preserved in salt water and cooked in red wine with tomato paste, garlic, coriander and spices. They are then preserved in white wine vinegar, finely chopped onions, carrot, celery and pearl onions.
