Our Périgord Sainte Lucie A.O.C pepper is a fruity variety which is picked green, then dried and smoked. A stunning black pepper with its incomparable flavor: tasting notes of cinnamon, cloves, berries and red fruits, it provides its robustness at the table with salads and grilled meat dishes. Delicate and fruity, the peppercorns of Sainte-Lucie are as unique as they are beautiful with a slight acidic sourness at the end. This has been traditionally used to sprinkle meat that is served immediately but we found it to be a finesse for all fish and shellfish dishes. This product is of the best quality and 100% natural ingredients. This pepper is made from the Espelette peppers which are grown in France's Basque region. The peppers are harvested at midsummer and then dried, sweetened and stripped of their skin. The versatility of this spice is enhanced with the earthy flavors it brings to traditional French recipes like cassoulet and duck dishes as well as Spanish specialties like Paella and Chorizo sausage. The Espelette pepper is one of the most widely known peppers in France. The pepper comes from the Basque region of France and is called "the red gold" for its high quality and for the red-red colour of its mature fruits. Its flavor has a delicate spiciness.
