This delicious jar of St Mamet Pears Williams in syrup is made with 80% Williams pears that's blended with 20% apples to give it a naturally sweet taste. Comprised of 10% juice and 90% syrup, this pack contains 454g of Pears Williams in syrup. Only Williams Pears from the St. Mamet valley in the south of France are allowed to be candied by the traditional method: a whole pear after washing, steaming and simmering. The juice is collected; preferred for its flavor and for its bitterness, which reduces pectin in the fruit that can cause coughing when eaten fresh. The fruit is then cooked in their own juices for approximately 4 days at a temperature below 100°F (38°C). The moisture content is increased to almost 80%. Then, it is cooked with sugar syrup with a high concentration of sugar. This cooking process takes up to 10 hours. After this slow process, they are left in the syrup while crystallizing overnight, cooling rapidly thanks to the lower temperatures. These pears are carefully picked at the peak of ripeness and gently cooked in a light syrup, to preserve their delicate flavor and lovely sweetness.
