The answer lies in the world of AOP (Appellation d’Origine Protégée) – a French and European certification that protects the traditional methods, origin, and quality of certain regional products.
Cheeses like Mont d’Or or some raw-milk Brie varieties have strict rules around ageing, temperature, transport, and shelf life, which make international shipping tricky – and in some cases, legally impossible.
Some cheeses are also made with raw milk (lait cru), which is subject to stricter import regulations in countries like the UK, especially since Brexit.
