This would make it more difficult for the diabetic person to digest the cheese and absorb its nutrients.

The best way to find out if it is suitable for you is to try it and see how it affects you. You can get some from the supermarket or your local health food store.

There are a few options here.

You can also make a dressing from olive oil, vinegar, salt, and pepper and toss the salad in that before topping with crumbled goat cheese. This is my favorite option because I can make a dressing that matches the other flavors in my salad.

If you have a salad that calls for crumbled goat cheese, but you only have goat cheese logs or rounds, it's easy to crumble them yourself. First, use your fingers to break the goat cheese into smaller pieces, then put the pieces in a reseal able plastic bag and crush them with a rolling pin until they're the size of crumbs. If the cheese starts to melt from the warmth of your fingers, put it in the refrigerator or freezer for 30 minutes before continuing.

If you want to melt goat cheese for use as a sauce, spread it on bread or crackers or as part of a hot dish, cut it into pieces and place them in an oven-safe dish. Set your oven to 350 F and bake it for 10 minutes. You can also use alternative methods such as broiling or grilling it.
