French biscuits and cakes are a true delight—whether it’s a buttery sablé, a delicate madeleine, or a rich opera cake. But how can you keep them fresh for as long as possible? Here are some expert tips to help you preserve their flavour and texture.
1. Choose the Right Storage Container

The key to keeping biscuits crisp and cakes moist is the right container:

• Biscuits: Store them in an airtight tin or container to prevent moisture from softening them. Metal tins work best for preserving crunchiness.
• Cakes: Use a cake dome or airtight plastic container to prevent them from drying out. If your cake is frosted, ensure the lid doesn’t touch the topping.

2. Store Biscuits and Cakes Separately

Biscuits absorb moisture easily, so keeping them with cakes (which release moisture) can make them soggy. Always store them in different containers.

3. Keep Them at the Right Temperature

• Room Temperature: Most biscuits and cakes last 3–7 days at room temperature in a cool, dry place.
• Refrigeration: While biscuits don’t need refrigeration, cakes with cream or custard should be stored in the fridge. Wrap them well to avoid absorbing fridge odours.
