Pea soup with crème fraiche

    • 2 tablespoons of crème fraiche
    • croutons
    • bacon


      The stages of preparation


      • In a saucepan, melt the butter over medium heat. Add the red onion and fry for 2 to 3 minutes.
      • Add the peas, vegetable stock, sugar, salt and pepper. Simmer for about 15 to 20 minutes.
      • Drain the peas and save the cooking liquid. Using a food processor, process the peas to a purée and return to the pan. Add the cooking liquid gradually until you have the desired consistency.
      • Reheat the soup. Put the soup in a soup plate and top with crème fraiche, croutons and fried bacon.
