The ingredients
- 20g butter
- 1 shallot/red onion
- 1/2 l. vegetable stock
- 200gr shelled peas
- pinch of sugar
- salt
- pepper
To serve
- 2 tablespoons of crème fraiche
- croutons
- bacon
The stages of preparation
- In a saucepan, melt the butter over medium heat. Add the red onion and fry for 2 to 3 minutes.
- Add the peas, vegetable stock, sugar, salt and pepper. Simmer for about 15 to 20 minutes.
- Drain the peas and save the cooking liquid. Using a food processor, process the peas to a purée and return to the pan. Add the cooking liquid gradually until you have the desired consistency.
- Reheat the soup. Put the soup in a soup plate and top with crème fraiche, croutons and fried bacon.
