Coq au vin in white wine

The ingredients

  • frying fat
    200 g button mushrooms
  • 300 g leeks cut into rings
  • 300 g onions
  • 3 cloves of garlic, finely sliced
  • 3 dl white wine
  • 1 dl chicken stock
  • 2 bay leaves
  • salt, pepper, to taste
  • 3 sprigs flat leaf parsley, leaves removed

 

The stages of preparation 

  1. Melt the fat in a frying pan.
  2. Flour the chicken pieces, shake off the excess flour and season.
  3. Sear the meat in portions on all sides for 5 minutes.
  4. Remove the meat, set aside and wipe off the cooking fat.
  5. In the same pan, melt a little butter for roasting.
  6. Add the mushrooms and vegetables and fry for 10 minutes.
  7. Moisten with the wine and stock, add the chicken and bay leaves and bring to the boil.
  8. Lower the heat, cover and braise for about 30 minutes.Finish cooking uncovered for approx. 15 minutes and season.
  9. Sprinkle with parsley before serving.
