For the orange cream
- 150ml double cream
3 tbsp caster sugar
juice of one orange
zest of one orange
The stages of preparation
Separate the egg whites from the yolks and place them in separate bowls. Whisk the egg whites with salt until stiff.
- In the other bowl, add the sifted flour to the egg yolks, then the baking powder, milk and cocoa powder. Beat together until well combined.
- Fold the egg white mixture into this bowl, being careful not to lose too much air so that it stays fluffy.
- Using a ladle, pour the mixture into a non-stick pan over medium heat. When small bubbles start to burst on the surface, it is time to flip the pancake.
- Make the orange cream. To the double cream, add the powdered sugar and mix. Add the orange juice and finally the orange zest. Add your favourite toppings to the crepes.
